After Jesus resurrection, he appeared to many people. Some of these people touched him, ate with him, and spoke with him.
When Paul was writing to the Corinthians, he pointed out than many of the people Jesus appeared to were still alive. This meant that if someone doubted Paul there were other eye witnesses they could go an speak with to learn the truth.
